I wanted to use the variables {FONT_FAMILY_NAME} and {FONT_VERSION_STRING} in the footer when printing a character set. This doesn't seem to be possible as it prints as text. Am I doing something wrong?

Is it possible to modify the Title on each page of the character set?

About your first question, see the Predefined page print variables for a full list of possible predefined variables. Font specific variables are not allowed, because the font listings contain more than one font per page.
About your second question, No, the title is predefined.
Maybe it would be better to define different options for each of the print templates.
