Yes, if you want a coloured background you will need to use pictures like WMF or PNG, not fonts.

Am I correct in saying the black will change color and the airplane cutout will stay white or do I have to add a background color of white? You would load the template in your image processing software, and draw on it with a digital pen.

You can also use cut and paste from one image to another. A program with layers would be easier to use than IrfanView as it would let you reposition letters before merging them with the template.

Yes. You can do it with FontCreator by adjusting the side-bearings carefully, but it takes a bit of patience.
