It would have helped if you provided this information from the start, but we’ll get there now that we know the whole story 
There is no native export to PDF feature in Scanahand, so it is safe to say this is not a Scanahand bug. I assume you’ve produced the PDF by printing the empty template through a PDF producer (for example Acrobat Distiller). If so, then most likely that printer driver is not Unicode aware. Contact the driver vendor and see if they can help. We’ve had great results with both PDF995 and CutePDF as mentioned here.
