Hi,
I'm using Photoshop CS4, Illustrator CS4 and Office 2016 on Windows 10.
My only need is to hide the fonts I don't use (system fonts or other fonts) in the font menus of the above mentioned applications.
Can MainType do that?
If so, which version of MainType should I get?

I suspect that uninstalling them is the only way. However, uninstalling system fonts is not recommended.
Using a font manager makes it easy to uninstall and reinstall groups of fonts. Just add them to a group and uninstall/reinstall them in one fell swoop.
